A refreshing corn-based drink enjoyed in the south of Mexico.  We sampled this at our wine pairing event.  For our purposes, we bought masa at a market in Santa Ana.  Feel free to experiment with different types of chocolate.


1 part Masa (250g ground corn)
1 part 50% cocoa (250g chocolate)
4 part hot water (1000g water)


Blend or mix contents thoroughly. Enjoy hot or cold and at any cocoa percentage. Add in nutmeg and cayenne pepper to taste.
